Smoked Salmon and Scrambled Eggs on Toast
Ingredients:
- 2 eggs
- 1 slice whole-grain bread
- 2 oz smoked salmon
- 1 tablespoon cream cheese
- 1 tablespoon chopped fresh chives
- Salt and pepper, to taste
Instructions:
- Toast the bread and set aside.
- In a small bowl, beat the eggs with salt and pepper.
- Heat a non-stick skillet over medium heat and add the beaten eggs. Cook, stirring frequently, until the eggs are scrambled and cooked through.
