Smoked Salmon and Scrambled Eggs on Toast


  • 2 eggs
  • 1 slice whole-grain bread
  • 2 oz smoked salmon
  • 1 tablespoon cream cheese
  • 1 tablespoon chopped fresh chives
  • Salt and pepper, to taste


  1. Toast the bread and set aside.
  2. In a small bowl, beat the eggs with salt and pepper.
  3. Heat a non-stick skillet over medium heat and add the beaten eggs. Cook, stirring frequently, until the eggs are scrambled and cooked through.
  4. Spread the cream cheese on the toast and top with the scrambled eggs and smoked salmon.
  5. Sprinkle with chopped chives and serve.
