Chickpea and avocado salad
Ingredients:
- 1 can of chickpeas, drained and rinsed
- 1 avocado, diced
- 1 red onion, diced
- 1 red bell pepper, diced
- 1/4 cup chopped cilantro
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
- In a large bowl, combine chickpeas, avocado, red onion, red bell pepper and cilantro.
- In a separate small bowl, whisk together olive oil, lemon juice, salt and pepper.
- Pour the dressing over the chickpea mixture and toss gently to coat.
- Serve immediately or chill in the refrigerator until ready to serve.
