Chickpea and avocado salad

Ingredients:

  • 1 can of chickpeas, drained and rinsed
  • 1 avocado, diced
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1/4 cup chopped cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  • In a large bowl, combine chickpeas, avocado, red onion, red bell pepper and cilantro.
  • In a separate small bowl, whisk together olive oil, lemon juice, salt and pepper.
  • Pour the dressing over the chickpea mixture and toss gently to coat.
  • Serve immediately or chill in the refrigerator until ready to serve.
