Grilled salmon salad

Ingredients:

  • 1 lb salmon fillet
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 1/4 red onion, sliced
  • 1/4 cup chopped fresh dill
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp lemon juice
  • Salt and black pepper to taste

Instructions:

  1. Preheat grill to medium-high heat.
  2. Season salmon with salt and pepper. Grill salmon for 5-7 minutes per side or until cooked through. Set aside.
  3. In a large bowl, combine salad greens, cherry tomatoes, cucumber, avocado, red onion, and fresh dill.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour dressing over the salad and toss to coat.
  6. Divide the salad among plates and top each with a piece of grilled salmon.
  7. Serve immediately.
