Grilled salmon salad
Ingredients:
- 1 lb salmon fillet
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 avocado, sliced
- 1/4 red onion, sliced
- 1/4 cup chopped fresh dill
- 1/4 cup extra-virgin olive oil
- 2 tbsp lemon juice
- Salt and black pepper to taste
Instructions:
- Preheat grill to medium-high heat.
- Season salmon with salt and pepper. Grill salmon for 5-7 minutes per side or until cooked through. Set aside.
- In a large bowl, combine salad greens, cherry tomatoes, cucumber, avocado, red onion, and fresh dill.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to coat.
- Divide the salad among plates and top each with a piece of grilled salmon.
- Serve immediately.
